Mount Pleasant Farmers’ Market – May 13, 2017

Dear Friends of Mount Pleasant Farmers’ Market:

It will be a decent day at the Market, don’t let the threat of a few sprinkles stop you from getting the first crop of local strawberries!  If need be, don your slicker & Wellies and carry a big basket for all those strawberries.  It looks like the rain may end fairly early in the morning….

Do you have a Farmers’ Market recipe that you would like to share?  Send it along, thanks!

Rhubarb & Strawberry Pie

“A delicious tart and sweet combination. Nothing tastes better with vanilla ice cream. Fresh or frozen rhubarb may be used.”  Recipe by:Terri

200 g white sugar

60 g all-purpose flour

455 g fresh rhubarb, chopped

715 g fresh strawberries

1 recipe pastry for a 9 inch double crust pie

30 g butter

1 egg yolk

25 g white sugar

Preheat oven to 400 degrees F (200 degrees C).

In a large bowl, mix flour and sugar. Add strawberries and chopped rhubarb. Toss with sugar and flour and let stand for 30 minutes.

Pour filling into pie crust. Dot top with butter, and cover with top crust. Seal edges of top and bottom crust with water.

Apply yolk to top of pie, using a pastry brush. Sprinkle with sugar. Cut small holes in top to let steam escape.

Bake at 400 degrees F (200 degrees C), for 35 to 40 minutes, or until bubbly and brown. Cool on rack.
